Yes, that is enough time. You just have to go through Schengen Exit passport control and then to your departure gate.

If both flights are on the same reservation you have a chance. If no, then it will be almost impossible.

You do not arrive in Terminal 5. No flights arrive in Terminal 5. You arrive in Terminal 3. With carry-ons this should be easy as all you have to do is go to your departure gate and/or the Vueling transfer desk.

You won't have to go through security if both flights are on the same Alitalia reservation. You just go through passport control and to your departure gate. I would want 2 hours.
