If you don't have checked bags and already have your Air Canada boarding pass, yes, you can go right to your departure gate. There is no US Customs when leaving the US. You will go through Canadian immigration and customs in Toronto.
I am flying from San Franciso to Amsterdam with a changeover at SLC. My first flight gets in at 16.20 and the next flight leaves at 16.50. Both flights are Delta. Will I have time? That's enough time if everything goes perfectly. Yes, if you miss your connection then Delta is required to rebook you to Amsterdam, although it's unlikely they would be able to get you on another flight that evening.
I'm flying into SLC Terminal 2 at 7:25pm from MCO on a connection flight to Calgary, Canada that leaves at 7:55pm, I'm assuming from the International terminal. Is this enough time to get from gate to gate? Will I have to exit and clear security again between terminals?
SLC only has one terminal. All you have to do is walk from your arrival gate to your departure gate. You have enough time if your flight from Orlando is on-time.

At SLC, Delta uses both Terminal 1, Concourse B, and Terminal 2, Concourse C. The terminals are connected to each other and concourses and gates are easily reached from level 2. Concourse B has gates B1-18; Concourse C has gates C11-3. Your ticket will show you your gate numbers - Also, look at the overhead screen on arrival to find your connecting flight & gate number. 35 mins should be adequate.
