I'll have 2 hours layover in SFO. According to United Airline's website, 45 minutes is the minimum check-in time prior to departure, so technically I will have 1 hour and 15 minutes to clear immigration, obtain my luggage, then check them back in. Will that be enough time to make the connection?
You will already be checked in for your flight to SAN. You have enough time. You just have to go through US Immigration, claim your bags, go through US Customs, re-check your bags at the re-check desk, go through security and to your departure gate.
If I book a domestic flight from LAS arriving SFO at 21.15 do I have enough time to connect with my pre-booked Qantas SFO to SYD leaving at 23.25 10/29/16? Assuming I will not be able to check my baggage all the way through as will not on same ticket.
That should be just enough time if the flight from LAS is on-time.

If both flights are on United, then you have to go through US Immigration, claim your bag, go through US Customs, re-check your bag at the re-check desk, go through security and to your departure gate. You should have enough time.
