I am arriving in Denver on a flight operated by United at 7am and departing on Air Canada for Vancouver at 7:55am. Traveling on to Beijing from Vancouver. Will I have enough time to catch my Denver -> Vancouver flight?
Yes, that should be enough time if the first flight is domestic. All gates in Denver are connected inside security by the underground train.

You will pre-clear US Immigration and Customs in Canada. All you have to do in Denver is go from your arrival gate to your departure gate both in Concourse B. You have enough time if the first flight is on-time.

Denver only has one terminal. You arrive in Concourse C and depart from Concourse B. You do not have enough time if you have checked bags, but have just enough time if you have carry-ons, check in for your United flight online, and your Southwest flight is on-time.
