If both flights are on the same reservation that is enough time.
Arriving from Wash-IAD to Frankfurt at 11:50am and leave for Athens at 1pm (70 minutes). Arrive and leave from Terminal 1, but unsure of gates. Is this enough time if we have checked luggage to make our Athens flight?
Yes, that is enough time. You just have to go through Schengen Entry passport control and to your departure gate.
I am arriving at Frankfort Airport on UA flight 46 on Saturday morning at 11:40. I need to transfer to EgyptAir flight 786 (to Cairo). I am 73 and worried. I have 3 hours between flights. Should I rush? Any stairs? Do I take the train? Is there any staff to accompany me?
You don't have to rush. If both flights are on the same reservation you just have to go to your departure gate - just follow the signs.

Wondering if we will have to go through security / customs when having a connecting flight in Frankfurt from Chicago going to Venice. We originally had 1.5 hours but now only have 55 minutes. Both flights are with Lufthansa. I see they have express lanes for security but we've never been before and want to have an idea of where were going so we don't miss our connecting flight.
You go through Schengen Entry Passport Control in Frankfurt. You don't have to go through security. You have just enough time.
