I am booking a flight from Vancouver - Denver - Houston - Rio de Janeiro in February.

My flight from Denver will arrive in Terminal C in Houston's airport at 8:44 p.m. My flight from Houston to Rio will leave from Terminal E at 9:40 p.m. My layover in Houston would be 56 minutes.

Would 56 minutes be enough to get from Terminal C to Terminal E, and check-in in time for departure? Thanks
Yes, that is enough time. You will already be checked in for your flight to Rio so all you have to do is go from your arrival gate to your departure gate.

I will arrive Terminal C at 8:37 and my connection flight leaves Terminal E at 9:35. Will I need to take at tram and how often does it run? Trying to figure out if there is enough time as this is the best option to minimize layover time.
The tram runs every few minutes (maybe every 3). You have enough time if the first flight is on-time.
I'll fly in with Lufthansa from Germany (German Passport + ESTA), the connecting time is 1 h 25 mins to catch my flight to Cancun, Mexico. Can i make it during that time? The flight will be in March.
That's probably not realistic. Maybe it's possible if the first flight arrives arly.
Hi, I am travelling from Costa Rica to San Diego on United and connection time in IAH is approximately 1 hour and 40 minutes. Is this enough to ge out, go through customs at terminal E, and reach the gate (possibly terminal C) before the flight to San Diego leaves??
That's just enough time if everything goes perfectly.

It's possible but it leaves no time to spare. The Skyway train connects all terminals inside security.
Hey I am flying from Austin to Houston getting in at 9 am and then needing to board a 9:50 am flight to Costa Rica.

Will my bags be checked through from Albuquerque to Peru?
Yes, assuming all flights are on the same reservation you don't have to do anything with your bags in Houston on your way to Peru.
I am travelling from Calgary-Houston-Bogota-Quito. Is 2 hours enough time to get my luggage bring it to security, go through customs and get to my gate? Also, as per in years past I had to retrieve my luggage and bring it to security and I am assuming I will have to do the same.
You pre-clear US Immigration and Customs in Calgary. If everything is on the same reservation you should just have to go from your arrival gate to your departure gate in Houston on your way to Quito.
