I am travelling from Glasgow to Newark and then on to Orlando. We only have 2 hours between flights and concerned about time. Is this enough time to get though Immigration, collect bags, re-check bag, security etc.. Thank you.

Go to a customer service kiosk or desk and you will be rebooked on the next available flight to Orlando on United.

Yes, in Newark you have to go through US Immigration, claim your bags, go through US Customs, re-check your bags at the re-check desk, take the AirTrain to Terminal C, go through security and to your departure gate.
Flying united SFO-DUB with connection in EWR and then reverse to get home. Will I need to change terminals? I can select flights with different connection times. What's good connection time so not stressed but not hanging around too long?
Both flights will be in Terminal C both ways. All you have to do both ways is go from your arrival gate to your departure gate. About 60 minutes is a good connection time.
I'm flying into terminal B and my mother is flying into terminal A. I arrive 30 minutes before her and I'd like to meet her at the gate and go through immigration together. Is there anyway to get to terminal A without going through security again?
No, you can't do that nor can you go through immigration with her.
Flying into Newark via Southwest arriving Terminal A, connecting to United International Flight in Terminal C. I will have carry on only. Will I have to go through security again?
Yes, you will have to go through security again. The shuttle inside security from A to C doesn't stop at the pier of Terminal A where the Southwest gates are. You have to take the AirTrain to C and go through security there.
