I have a SQ flight arriving in CDG at 7.30am at terminal 1. The next flight to London is 9.50am . I need to collect our bags, go through passport control and customs, and then re-check bags with Easy Jet. Is 2.5 hours enough to do all this?
It's barely enough time if everything goes perfectly. Your EasyJet flight will depart from 2D so you will have to take the CDGVAL there.

If both flights are on Air France, then yes, that is enough time. You just have to walk from your arrival gate to your departure gate.
Looking at flights from US to Dusseldorf Germany. Most have connections at CDG. If I book one ticket with the connection in CDG, will I have to go through customs? Or just passport control and bag will be transferred?

You will go through passport control in Paris, but not have to do anything with your bags.
I will have a 12 hour layover at CDG and booked a hotel for nap, shower, walking outside but nearby the airport grounds. I am then travelling on to Johannesburg, Africa. Is it OK to leave the airport?

How much time before departure to Johannesburg should I get back to CDG?

It's possible but doesn't leave much time to spare. CDG Terminal 2 is a bit of a zoo.

If you are a US, Canadian, or EU Citizen or have a Schengen visa, then yes, you can leave the airport.
If I have 50 min between landing on a flybe flight 9from the UK) and departing on an AF flight (to Saudi Arabia), will I have enough times? And is it the same terminals?
FlyBe and Air France Non-Schengen are in the same concourse. You should be OK as long as your first flight is on-time and your bags are checked through to Saudi Arabia.
